Create a field that tracks Number of Accepted Assignments in the last 7 days on the volunteer profile

In order to help the regional CIC’s to better assign MRE’s across all of their chapters we will create a new field that displays the number of mentor request assignments accepted by a mentor within the past 7 days.
- Create a new field that calculates how many MRE's a mentor accepted the last 7 days
- Display the field under the Mentor Request Settings section on the volunteer profile
- Add the field to the My Active Mentors list view for CICs

Just as relevant is the number of Mentoring Sessions during the time period. CICs would benefit from knowing each volunteer's total workload, not just MRE assignments. And while I'm at at, how about including number of workshops presented...
