Update Engage Taxonomy to Categories and Sub-Categories for Mentor Requests and Events

We will be splitting the current Mentoring Area field on the Mentor Request record and the Training Topics field on the Events record into Categories and Sub-Categories.
We will also be adding Buying and Selling a Business back as a sub-category to the Nature of Mentoring field on the mentoring session.
